I recently told you about Pikanik, Vancouver’s only allergen free bakery.
With the food allergies some of us have in our house, I was completely intrigued by Pikanik and knew it was a must try for us.
We have tried the following items so far:
1 loaf of honey sandwich bread
1 ginger cookie (individually wrapped)
1 oatmeal chocolate chip cookie (individually wrapped)
1 fudge cookie bar (individually wrapped)

The Honey Sandwich Bread is delicious and I would never have known it is wheat free, gluten free, dairy free, nut free, soy free, and egg free. It was soft and squishy just as they advertise and delicious. It is the perfect sandwich bread or as toast in the morning. I enjoyed a couple of slices this morning, lightly toasted and buttered and it was light and delicious.
As there are no preservatives in the bread, I recommend slicing it ahead of time and freezing it. Then you can access slices as needed to make your sandwiches or for your toast. The bread freezes well and it is a great way to keep it around and delicious longer.
For the Ginger Cookie and Oatmeal Chocolate Chip Cookie I did not even get to try them. My Little One had gotten into the two cookies and devoured them before I could get a taste in. She knew they were special cookies that addressed food allergies and said they were better than traditional cookies. She thought they were nicely sweetened, soft, and delicious. I wish I could tell you what I thought of them, but their disappearing so rapidly is a pretty good sign that they rock. π
For the Pikanik cookies, you can also order the dough in bulk and freeze it so that you can make cookies as you need them.
My Little One was not as much of a fan of the Fudge Cookie Bar, but my middle one who is 14 and does not like things too sweet loved it. Having said that, my Little One expects anything that says fudge to be super sweet like straight fudge. If you like your fudge bars adequately sweet and not over sweet then you will probably love the Fudge Cookie Bar.
For all of Pikanik products that we have tried so far, we could not tell that they were allergen free products. What I mean by that is, we have tried other products before and they were say gluten free and were like cardboard. With Pikanik products the quality is extremely high.
We love Pikanik and I love that they are local. I also think that it is amazing that you can order online and it gets delivered right to you. How amazing is that.

Okay there is a lot I want to still try from Pikanik, but those are my top wish list items. Next on our list to try is the Flippin Fantastic Flapjacks which we have and will get the low down on the flapjacks as soon as we have a flapjack kind of day. π
